These minty, chocolatey, chewy meringue cookies are inspired by the Snowman Piece item in Undertale!

Ingredients:
2 large egg whites at room temperature ½ teaspoon cream of tartar 1/8 teaspoon salt 2/3 cup granulated sugar 1 teaspoon vanilla extract 3 oz finely chopped dark chocolate mint bark *
Directions:
Preheat oven to 350 degrees F and line a cookie sheet with parchment paper.
In a large mixing bowl, add egg whites, cream of tartar, salt, and vanilla extract. On high speed, beat until fluffy with an electric mixer.
While continuing beating, add sugar gradually - about a tablespoon or two at a time. Continue beating until sugar is dissolved and meringue is shiny and tight.
Gently fold chopped dark chocolate mint bark into the meringue.
Drop heaping teaspoons of meringue mixture onto the prepared cookie sheet, spacing them out about one inch apart. Place cookie sheet into the preheated oven, and turn the oven off. Allow the cookies to sit undisturbed for at least two hours before removing. The cookies should be crisp, light, and chewy in the centers.
* If you’d turn your nose up at chocolate if you found it on your plate, feel free to substitute this ingredient with 5-10 crushed hard candy mints!
